At Burlock Coast in Fort Lauderdale, eat like Emeril Lagasse is in the kitchen

Fort Lauderdale chef Paula DaSilva brings back summer culinary series Paula's Food Diaries to spotlight dishes from celebrity chefs Emeril Lagasse and Lorena Garcia.

If you’ve ever wanted to tuck into a signature dish from celebrity chefs Emeril Lagasse and Lorena Garcia, Fort Lauderdale chef Paula DaSilva is going to make it happen. 

DaSilva is bringing her popular summer culinary series Paula’s Food Diaries back to Burlock Coast Seafare & Spirits, with a June menu feature based on a favorite recipe from Lagasse, followed in July by a dish from Garcia. (Stay tuned: Recipes from two more celebrity chefs will be added to the series, names TBD.)

This is the second annual edition of Paula’s Food Diaries at Burlock Coast, the waterfront restaurant at The Ritz-Carlton in Fort Lauderdale, where DaSilva is director of culinary and beverage. Of course, she also is an alum of Gordon Ramsay’s reality-TV cooking competition “Hell’s Kitchen.”

The premise of Paula’s Food Diaries: Each month, Burlock Coast diners will get the opportunity to enjoy a menu item prepared by the restaurant’s acclaimed staff to the exacting specifications of the original recipe from one of DaSilva’s famous friends.

In a statement, DaSilva said the series offers guests “a unique opportunity to experience the culinary excellence of top chefs from around the country. … This series not only highlights incredible talent but also brings diverse and dynamic flavors to the heart of Fort Lauderdale.”

The schedule so far includes:

Chef Emeril Lagasse’s Seared Scallops, available June 1-30: The pride of New Orleans, renowned restaurateur, TV personality and author, Lagasse’s scallops will arrive atop a truffle white-bean puree, the dish finished with a rich wild mushroom sauce. Cost: $52+.

Chef Lorena Garcia’s Asado Negro Arepas, July 1-31: One of the country’s most recognizable chefs, thanks to her work on Bravo and the Food Network, the native of Caracas, Venezuela, has shared the recipe for a dish featuring Wagyu short rib served with handmade anise-and-piloncillo arepitas and garnished with pico de gallo, cotija cheese and micro cilantro. Cost $25+.
