The Pioneer Woman's Air-Fryer Falafel Is the Perfect Vegetarian-Friendly Party Food

Heading into summer party season, it’s crucial to have some go-to recipes on standby. You want to be able to whip up some tasty snacks quickly next time you’re invited to a pool party, right? Ree Drummond (AKA, the Pioneer Woman) has a delightful new appetizer that is perfect for the vegetarians in your friend group. And did we mention you make it in the air fryer? No need for big pans of hot oil for this easy recipe!

The Air-Fryer Falafel is made in little round balls, making it a perfect finge food. “You’ll love crispy, golden falafel piled into a pita with fresh veggies and creamy tahini yogurt sauce! ????” Drummond captioned a post on Instagram. “Best of all — it’s easy to make at home!” Say less, because we’re already sold!

Falafel is a classic vegetarian dish, because it’s filling and so flavorful. It’s usually made with chickpeas or fava beans, folded into pitas or served with salad. Drummond’s recipe uses canned chickpeas instead of dried, which still offer a “fantastic texture,” but are much more convenient. “A little bit of flour counteracts any wetness in the falafel dough for easy rolling,” she explained.

The falafel is first prepared in a food processor, by mixing cilantro, cumin, and other ingredients until they are “very finely chopped.” Then you add the chickpeas and process again until the mixture is “almost smooth.” From there, stir in sesame seeds and roll the dough into balls, dropping in an air-fryer basket to cook until “very brown and crunchy.”

While these are delicious on their own — or served with pita, tomatoes, and lettuce — Drummond also recommends whipping up a Tahini yogurt sauce for dipping. This calls for plain Greek yogurt, tahini, and other ingredients, which are whisked together in a bowl until they reach a consistency that’s easy to pour, and then stored in the fridge until it’s time to serve.
