Here’s how to give those dodgy greens in your fridge a second chance

A BOWL of limp salad leaves is a sad thing to find in your fridge.

Instead of wasting your money by throwing them away, give your salad a second chance.

Whether you cook up a soup, side dish or pasta sauce, there are loads of way to give lettuce a new life.

Here are some of them you can try . . . 

ICE TRY: If you’ve plans for salad but your lettuce looks limp, give it an ice bath to perk it up.

Fill a bowl with ice cubes and then place the lettuce on top.

Add cold water until it covers the leaves and then leave for 15 minutes. Take it out, dry carefully and you should have the start of a perkier salad.

HEY PESTO: If even the coldest water won’t make a difference, whizz up lettuce pesto instead.

Put a lettuce or any salad leaves in a food processor with a clove of garlic, bunch of fresh herbs, a handful of pine nuts and around four tablespoons of olive oil.

Blend the ingredients together to make a pesto sauce, adding a dash of water if you need to loosen it up.

Stir this into cooked pasta and add an extra dollop on top.

SOUP-ER IDEAS: Lettuce soup is a surprising winner.

To take it from limp to luxe, fry some leaves in butter before pouring in a litre of chicken or vegetable stock. You can add other vegetables, like leeks or broccoli, to bulk it out.

Simmer for 15 minutes then  blend to a smooth mixture.

Add 100-150ml single cream, ideally, although milk will do. Warm it through and enjoy.

OOH LA LETTUCE: Give your old lettuce a delicious French-style makeover.

Fry an onion in butter, add the lettuce and a cup of chicken stock. Cook for a few minutes before adding around XXXg frozen peas.

Once the peas are cooked, stir in a dash of cream.

Serve as a tasty side dish.
