Tikka Masala Cauliflower

For the cauliflower

1kg cauliflower cut into small bites

2-3 tablespoons vegetable oil

Juice a lemon

1 tsp salt

1 tsp pepper

For the sauce

2 tbsp unsalted butter

1 large onion, finely chopped

½ tsp salt

1 tbsp ginger, grated on a fine grater

1 garlic clove, crushed

1 tsp dry coriander

1 tsp ground cumin

1 tsp garam masala

1 tsp ground turmeric

1 tsp chili seasonings

1 tbsp tomato paste

500g pashata tomatoes

200g soy cream

Coriander leaves to garnish

Cut the cauliflower into small bite-sized pieces and place in a bowl with oil, salt and pepper.

Preheat oven to 200C.

Line the pan with parchment paper, spread the cauliflower. Bake in a well-preheated oven for 25 minutes or until cauliflower is golden brown.

At the same time, prepare the sauce. In a large frying pan melt the butter. Sauté the onion with the salt. Then add the ginger and garlic and sauté for 15 seconds. Then, add all the spices of the recipe in turn and sauté until their aromas come out.

Add the tomato paste, passata and soy cream. Simmer for 5 minutes.

Last add the cauliflower and boil for 2 minutes.

Off heat, garnish with fresh coriander and serve with rice.

Aromatic rice with Cardamom

1 cup basmati rice

2 cups water

1 tbsp unsalted butter

1 tsp salt

1 tsp whole cardamom seeds

Rinse the rice thoroughly with cole water until the starch is gone and the water comes out clean.

Place the rice in a colander on a basin and let it drain.

In a saucepan add 2 cups of water along with the butter, cardamom and salt.

Once the water boils, add the rice, stir and lower the heat.

Leave for 10-11 minutes uncovered or until all the water is absorbed. Do not stir.

Then, remove the pot from the heat and cover with a clean towel for 5-7 minutes.

Before serving, break the rice with a fork until fluffy and steam is gone.

Mango and Apple Chutney

1 large apple, peeled, pitted, cut into small cubes

1 small mango, cut into small cubes

1 red pepper, seedless, cut into small cubes

100g brown sugar

1 medium chopped onion

50g raisins

60g apple vinegar

1 tbsp ginger, grated on a fine grater

2 tsp curry seasonings

1/2 tsp cinnamon powder

½ tsp salt

1 tbsp lemon juice

In a saucepan add all the ingredients except the lemon juice.

First, boil over high heat and mix well.

Then, lower the heat and let the fruit soften for about 20 minutes.

Occasionally you should stir the mixture to prevent the fruit from sticking to the pot.

After the mixture thickens and most of the liquids evaporate, add the lemon juice.
