And we did enjoy the sweet, citrusy glaze. However, the orange zest strips were unpleasantly chewy. I think I’ll repeat, but this time perhaps microplane the zest. My sweet potatoes were soft and the glaze thick in a little over an hour.Bicka2 years agoMade this last night. I cut the potatoes much thinner, into around 1/4 inch rounds which I cut in half or quarters to get closer to bite size. I cooked at 375 bit covered for half the time to prevent the glaze from burning. Total cooking time of one hour. This was really good. Sweet with a hint of spice. Next time I will more finely slice the orange zest.
