Ramen: A bowl full of Japan’s culinary evolution

This global appreciation has led to new interpretations of the dish, from vegetarian broths to fusion flavours that marry Japanese techniques with local tastes.
Despite its evolution and international fame, ramen remains deeply rooted in Japanese culinary tradition. It embodies the principle of umami, the savoury fifth taste that is a hallmark of Japanese cuisine.
