The Pioneer Woman Welcomes Her Young Adult Kids Home With This Ultra-Cozy & Comforting Fall Soup
Being an empty nester can be hard — especially at this time of year! — but there is one guaranteed way to get your adult kids to come home and visit you. Food! Ree Drummond (The Pioneer Woman) knows this all too well, as she is mom to five kids in their 20s with husband Ladd Drummond. She entices her children to come home with an ultra-cozy and comforting fall soup, and our mouths are watering already!
“Paige, my second-born child is back, Drummond says in a new video on the Food Network’s YouTube Channel, as she browns meat on the stove. “She is living close by and working on the ranch with her dad, and it has been so much fun.” Drummond added that she is cooking her food to “show her how excited I am to have her home.” How sweet is that? One of the recipes she is using to show her affection is the Sausage, Potato and Corn Chowder recipe, which she makes in big batches that can be frozen and reheated.
She starts by browning breakfast sausage, then setting it aside. Carrots and other chunks of veggies go in the Dutch oven next to be satuéed. Next, add peeled and chopped potatoes, store-bought fire-roasted corn, and spices to season the meal.
She adds chicken stock and lets it cook, then thickens with a flour mixture that “turns the brothy soup into more of a chowder.” She makes it “even creamier” by adding cream and pureeing the soup a little bit before she adds the sausage back in. The puree part is truly optional and just depending on personal preference and how chunky you want the soup to be.
After serving, Drummond tops the soup/chowder with shredded cheese and another ingredient before digging it. “That is a fabulous bowl of chowder perfect for my chowder-loving daughter,” she says. And us too! It looks delightful.
“Looks so delicious and hardy. I have to add this to my recipe book,” one person commented. “Thank you so much for sharing ????????. Blessings from my family to yours.”
“Yum! Paige is lucky,” another said. Yes, can we have The Pioneer Woman make extra-comforting fall soup for us too?!
You don’t have to have adult children to bribe in order to make this soup. It makes the perfect weeknight dinner for any family and is an especially convenient meal to make ahead of time and freeze for days you don’t feel like cooking.
