Marcus Samuelsson shares a comfort-food recipe for oxtail pepperpot with dumplings

Marcus Samuelsson has a recipe he calls true comfort food. It's an oxtail pepperpot recipe from his cookbook, “The Rise.” This is a traditional Caribbean dish, mainly from Guyana, that combines oxtail and dumplings in a rich gravy. The gravy is flavored with cinnamon, brown sugar, hot chiles, and cassareep, a sauce made from cassava root. African Americans adapted the recipe by using oxtail instead of offal. Samuelsson suggests slow-cooking the dish for hours to enhance its flavors. He recommends preparing it a day in advance. The dish is served with rice and peas.
